I didn't know France had turkey farms!

The only turkeys I've ever found here in France are in the supermarche and they were just miniscule strips of breast meat. I've never encountered dinde on a restaurant menu. But alas, the grippe aviare has found its way to what I suspect is THE ONLY French turkey farm.

Perhaps you haven't looked for turkeys in the markets. The best turkey I ever cooked (and the most expensive) was from Bresse and had a certificate of origin attached; I bought it in the covered market in Cahors. But, of course, you and your sheep live in duck territory.

I looked up Bresse turkeys, having only heard of and tasted the Bresse chickens, and voila, you were right as usual.
